Depends on your interests. In the Alps, you might find Briancon or Barcelonnette
a good base camp if you want to find lots of mountains, nature or the ancient
military fort by Vauban at Guillestres.
More to the west of the provence, you might take the ancient cities of Narbonne
and Carcasonne as a base to visit pyrenees mountains and the demolished castels
of the cathares (religious group, killed in order of the pope around 1200, 1300
AC).

We like Beaulieu-sur-Mer and Villefranche. The latter has a lovely harbour
situation (which is very deep - submarines were kept in it during WW2).

If you're willing to travel just a little further, go to Arc-en-Barrois.
There's a beautiful Chateau there which is also called Chateau
d'Arc-en-Barrois. I've stayed there and it's a great place with a lot of
nature, but also a little city-hopping is an option (Dijon, Troyes, Langres)
Really worth it.
