Sound like you operate similarly to me!
I was with my girlfriend, and we wandered over to Markt square (easily
found), went into a cafe, and the guy got us a room. It was very good value
as I recall. A huge room, right near the centre of town.
Your approach would work fine in my view. Just turn up, ask around, and
someone will help ya!

My wife and I and another friend will be spending 8 days in Maastricht
in mid January.I have traveled a bit in Europe so I am not totally
lost.My concern is that our flight from Amsterdam to Maastricht
arrives in Maastricht about 5:00 pm (1700 Hrs).We then catch a bus
from Maastricht-Aachen airport ro Maastricht train station of city
center. We will not have a room so we will need to locate somewhere to
stay.We want to possibly get two rooms from a private family or
individual.Since the tourist office will be already closed would it be
best to get of the bus and start hunting a place near the city center
or would we be better getting of the bus at the train station and
starting from there? I normally like to start my room hunt in a
neighborhood bar and this usually has great results because there is
always someone with a spare room that needs the extra money.

Considering the time of your arrival I would at least book the first
night ahead. Then stay if it's nice, or find something nicer the first
day... (that's what I always do)
here's a place to start:
www.bedandbreakfast.nl
tip: a zip-code ending in 11 will be in the city center.
(maastricht = 6211)
;-)

Do you really just go and chat up the locals in a bar and someone
has room (or knows someone...). I can believe it in places like
Greece but elsewhere?

It happens all the time at the gay bars in Amsterdam, too.
