Reba, I think you have it pretty much figured out now.
You have 8 days. Do Rome and Venice. Personally I wouldn't bother with Turin. Make sure you do your research before you commit precious time to it. Assisi is nice but you'd be better off doing it on another trip (when you take in Florence, Siena and Pisa). Spend your 8 days in two hotels. Don't try and see too many cities or towns as you will dilute your experience.
Remember also that Rome has some of the world's great art museums. Don't miss out on them.
Oh...and I wouldn't worry about the heat in July. We were there last year. Sure it is hot but it is not unbearable.
