From what I have read from studies of recover bodies from the bogs, they
historically ate gruel.

I had a platter of smoked fish in Amsterdam a couple of years back, at a
pre-concert event. I was astonished at the variety- I'm not even sure it
was all smoked (do they eat any raw?) as some of the flavours were so
subtle.

Smoke fish in Northern Europe. I don't know of any smoked Salmon from
Holland. It is Scottish, Danish, Norwegian and Swedish.
