My friend and I are planning a 2-week trip to northwestern
Europe from the states. The countries on the itinerary are Ireland,
Britain, the Netherlands, and Belgium. We'll probably be flying in to
London and going from there. My companion is a US citizen and I'm a
British national living in the US. As this is still in the planning
phase, I'm open to suggestions as to what to do, right now, we've
agreed to visit the Biodome in Cornwall and see a couple of musicals
in London. Anything to add to the plan? All suggestions
appreciated... Thanks in advance!

Given that all the places you list are a half-day apart from each other by
air, I think you're probably trying to pack a bit too much into two weeks.
However, in Belgium don't miss Bruges, it's a beautiful place about 1 hour
from Brussels. A day in Bruges, and possibly another day in Brussels, then
head up to Antwerp (which to my mind is nicer than Brussels), and then up to
Holland - you can do Amsterdam if you've never been, or take a look round
the Hague - very pretty town. You could easily fly in to Brussels and back
from Amsterdam using the low-cost carriers.
The weather will be awful at Xmas - wet and cold - so be warned.

If you're young, New Year's Eve on the Grand Place in Brussels might be
fun. I was there over New Years in 2000/2001, but spent most of the
evening at the opera. My hotel was near the Grand Place, and the
celebrations sounded tempting, but I figured they might be a bit rowdy
for an unescorted old lady.
