I am making my way from Munich to Amsterdam via train over the course
of a week. Travelling late May/early June.
My current itinerary is:
Munich (2 nights)
Nuremberg (2 nights)
Frankfurt (2 nights), then ICE train back to Amsterdam to get my
flight.
* This seems a good itinerary. I am not travelling every day and I am
slowly making my way by train towards Netherlands. But I am open to
suggestions for change. I have been to Koln before, otherwise I would
have stopped at Koln rather than Frankfurt.
* As I do not have a rail pass (I am over 40), I will be buying single
train tickets. Munich-Nuremberg, Nuremberg-Frankfurt,
Frankfurt-Amsterdam. Are there any cheaper ways to travel by train? I
think I read of a "Bavaria rail pass", which might give me cheaper
fare Munich-Nuremberg possibly.
* Whats the weather like in Munich late May/early June?
Thanks
Bruce

Just go here for first inquiries:

That is almost unpredictable. In the grand average it ought to be fair.
Enjoy your trip,

Frankfurt - Amsterdam is quite doable. ICE trains are fast and confortable.
But ofcourse, if you choose to make a stop over, then you could also take
the scenic route via the banks of the Rhine to Dusseldorf...

you might want to consider a route via Regensburg

Unless you like large towns, I would look for somewhere nicer,
Heidelberg perhaps.

you can buy a Bayern (single) pass, see here:

a) You could buy a single ticket for Amsterdam via Nuremberg and Frankfurt.
This ticket would be valid 2 months and you are allowed to interrupt your
journey as long it is en route and you're moving towards your final
destination.
b) Bavaria Ticket Single is EUR 15,- and valid for all local trains in
Bavaria. On weekdays (Mo-Fr) only past 9am. Furthermore it's also valid -
unlike normal rail tickets - for all public transport in Munich (MVV) and
Nuremberg (VGN) i.e. U-Bahn, trams and buses, not only for the local trains
(S-Bahn, RB, RE, IRE).
However the ticket Munich - N - F - Amsterdam is only 18 EUR more expensive
than Nuremberg - F - Amsterdam, thus it's a question if these 3 EUR saved is
worth the 1 hour longer travel time between Munich and Nuremberg.

Frankfurt is definitely worth the trip. If Frankfurt is too large then I'd
rather go see Würzburg, beautifully situated at the Main, university town,
very cute with fabulous fresco paintings by Tiepolo in the castle.
I live in the region, trust me: Heidelberg is so overrated.
