Can the 8 day Italy railpass be used on the train which runs from
Leonardo da Vinci Airport into the city? When using the railpass, can
supplements and reservations for the ES train from Rome to Florence be
made in advance?
Thanks in advance for any advice.

AFAIK yes as it's a FS train (the national railway)

It's possible and necessary to have the reservation before boarding the ES
train as it's reservation obligatory. Reservation may be done at the ticket
window until departure.
AFAIK you pay for the reservation only with the railpass not the supplement.
Be aware that you sometimes will find independent private railways where the
pass isn't valid.
It's for the FS network.

I was in Rome in December of last year. The buses and subways were all free.

They aren't free. You're supposed to buy a ticket (or a pass) before you
board. There are spot checks and if you're found without a ticket, you
pay a hefty fine.

There is more than one train running into Rome. The railpass can be used
on any of them, but on the express airport to Termini train, you will
have to also buy a supplement.
The supplement (if necessary) and the seat reservation must be purchased
in advance.
You may have already done all the price comparisons, but I just like to
warn people that with the low cost of Italian trains, the 8-day rail
pass is only good value for the money if you will be doing a lot of
long-distance travel. (Rome to Florence isn't long-distance travel.)
As an example, a 2nd class intercity ticket from Rome to Florence cost
24.95 Euro, about the same in dollars. A first class intercity ticket is
32.80. This is the basic cost covered by the railpass. A Eurostar ticket
costs a bit more (the cost of supplement and reservation). It would be
29.44 in 2nd class, 42.35 in 1st class. There is no reason to buy a 1st
class ticket unless 2nd class is full. I don't know what the railpass
costs, but I believe it would cover more trips of that length than the
average tourist makes.

Was this some special promotion or were you just not paying and hoping
to not get caught?

A supplement (including the seat reservation) is payable for all Eurostar
Italia services with any type of rail pass.

I had hoped to buy a rail pass to avoid having to deal with ticketing
each time I took the train. It sounds like I'm going to have to do
this for many trips even without the rail pass.
Do you know if the 8 day pass is even still available? I can suddenly
only find information on the flex pass.
