Hostales in August
I understand that August is the month in Spain (and other countries)
when people take their vacations and many things close. Should I book
small-medium hostals well in advance or could I find them on arrival?

Depending on where you are going, but generally yes. In any busy resort,
it's the budget accommodation that goes first, generally leaving only 3-5
star hotels as the only last-minute option.
