Can someone tell me the difference between DB NachtZug
and Schnellzug ?

Nacht = night
Schnell = fast or express
Better ? Depends on your criteria. If you want an overnight train, I suggest a nachtzug would be better. If you want a fast train, try schnellzug. However, you don't normally want a fast overnight train unless you like arriving at your destination at 03:00

nachtzug = overnight train
schnellzug = faster connection between a to b as it does not stop at every
milkcan on the way
faster train = ICE intercity train

Basically DB-NachtZug is a brand of DB, just like CityNightline,
Ellipsos etc are brands of their respective companies. There is also
Euronigh which is a service mark employed by many European Railways,
similar to EuroCity. They all stand for a certain concept and level of
service. They often have their own pricing system. Rebranding
international trains is quite in vogue right now...
Where night trains have not yet been "rebranded" they are just marked as
"schnellzug" in the German online timetable. "Schnellzug" has thus more
or less become a "catch all" moniker for any long distance trains that
hasn't been branded yet (or where the maintainers of the online
timetable were not aware of the brand). For example, the Basel - Brussel
Zuid overnight train is marked as a "Schnellzug" in the timetable, the
Basel - Amsterdam one is now a "City Nightline".
The level of service on a "branded" train is usually somewhat higher.
The price too...
