Itinerary opinions for 11 days in Oz

I have finalized my flights so have 3 full days in Auckland and 11 in
Australia. I am trying to figure out how to divide my time between
Sydney, Melbourne and Tasmania.
This is what I am thinking:
5 days in Sydney
3 days in Melbourne
3 days in Hobart
The things I'm keenest on, beyond general sightseeing:
In Sydney:
I want to take a day-long tour of the Blue Mountains. I also want to
feed kangaroos and hug a koala! There are a number of animal parks in
and around Sydney--any recommendations on the best? Featherdale and
Waratah Park seem to be the most highly recommended.
In Melbourne:
My main interests are the Healesville Sanctuary (more animals!), see
the Royal Bontanic and take the tour of the Old Melbourne Gaol.
In Hobart:
I want to take a trip to Port Arthur and am trying to figure out
whether I should plan to spend a night there or I can make a day trip
(including the ghost tour, which I absolutely must experience) from
Hobart somehow, even though I don't want to rent a car. I would also
like to go to Bonorong Park (yes, yes, more wallabies--and Tasmanian
devils!).

Re Hobart - you can visit Port Arthur on a day trip as part of an organised day trip, but because ot the time of the tour & distance from Hobart I don't know if there is one covering the ghost tour.
You can also travel independently by coach, but you can't get there & back in a day.

When in Hobart go to the Botanic Gardens also, which is walking distance
from town, and it overlooks the river.

Walking distance! Ooooh, that's great news, especially given all the
headaches I've had trying to figure out how to see enough of Port
Arthur without being stranded for two days! Thanks for the tip!

If you're into koalas, you're better off heading upcoast and visiting the
koala hospital at Port MacQuarrie - also a very pleasant little town in and
of itself. Chop a day or two of Sydney proper (I'm biased here) to do so.
3 in Hobart is more than plenty as well (I'm partial to Launceston) although
it'll be a full day from Hobart to Port Arthur and return. Don't schedule
Hobart for a Sunday or you'll be convinced the French have tested a Neutron
Bomb - lots of buildings, not a soul to be seen....
Try to schedule Melbourne for when there's a night market at the Vic Market
- wonderful!

They made us to go the old melbourne gaol on a school excursion when i was
in primary school... it scared the s#it out of me then.

Same here, they have been putting these on during summer for about 5 years
now, and i have still not gotten a chance to get to one....still, The Vic
Market is an experience even during the day... I highly reccomend a

try this option...
4 days Sydney.... the total tourist experience, lots of touristy things to
see and do. Should fill 4 days just fine.
4 days Melbourne, (sure im biased) This is a city that was voted the worlds
most liveable for many straight years, so live in it for 4 days.
Not overly tourist orientated, but more somewhere to experience, go to the
Vic Market on Sunday, go out on a bar crawl friday night (see how many
secret upmarket bars you can find down alley ways
... get the ferry from
Southbank to Williamstown for some fish'n'chips on a saturday arvo....etc;
With this extra day you could also go to phillip island and check out the
penguins, if animals are your thing.
2 days hobart would be ample. Its pretty, but compact.
With an extra day to insert wherever you find the most enjoyable.
