If one is a UK passport holder resident in Portugal, does the time spent in Portugal preclude spending time in other Schengen countries? For example, if one spends January-March in Portugal, can one visit Italy or Spain - either from the UK or from Portugal - between April and June?

Holders of valid residence documents from EU countries won't have passports stamped on entering any EU member state.
No and yes.
Editing to add link to information about those and other matters from the group British in Europe (also contains embedded link to EU Commission material on the same subject) : Travelling into and out of the Schengen area

RedEric - that helps clarify the details of in and out of europe.
Toots - take a look at RedEric's link - looks like we go through Non-EU passport control, but don't get stamped if we show our Residency Certificate (which by the way is a tatty A4 piece of paper rather than a card ...)

Re: update on Brexit-EU travel
Does anyone know if UK nationals resident in Portugal will have their passports stamped in France or Spain on entry if they are travelling by ferry?

Full chapter and verse given above in the link in post #4.
To simplify it to the very basics, if you hold a current PT residence document and carry it with you, then no. Existing doc will do until its expiry date but PT will shortly start issuing new WA style documents.
In the case of any doubt at the border, your passport will be stamped.
Mode of travel is irrelevant.

Wonder if a (photo) copy of residence cert. will be acceptable...Expect not but would save damage by repeated folding etc of original cert.

Re: update on Brexit-EU travel
Many thanks Eric, I was unsure as to what would happen when entering Schengen through France or Spain with Portuguese residency but it looks like UK nationals with residency in an EU state under the protection of the withdrawal agreement will not be stamped at any Schengen border.

Not sure whether it would cause a problem either at Portugal's border or another external Schengen border, though. For example, you could have the relevant page of your passport copied and certified and that would suffice for id at a hotel or for a traffic stop etc etc but I'm pretty certain wouldn't pass muster at passport control.
