Evora is one of my favourite places in Portugal. It has a student population, which keeps it lively but at the same time is a quite sleepy provincial town unwrecked by modern shopping malls. If you are interested in history it's got some good Roman ruins, a pretty well maintained permeter wall and some of the hotels are in labrythine buildings like casbahs.
