Rotorua - geothermal park, Maori experience, Zorbing, Kiwi reserve
Skiing in the Southern Alps - no trees and a fantastic view of the Pacific Ocean
The penguins coming ashore in Oamaru.
Loads more to see and do. Everyone will have their tips for places to visit and things to do.

Rotorua especially Wai-o-tapu or if feeling more energetic Waimangu Volcanic Valley (you walk the trail and end up on a boat to the site of the terraces.) Also the luge at Rotorua or Queenstown (SI).
Tongariro National Park.
Glowworms in the caves at Waitomo maybe.
If you go to South Island, the Glacier Explorers trip at Mount Cook is safe good fun, again in a National Park. You won't see the mountain unless it is a clear day though.
Milford Sound is very expensive and a bit disappointing on a bad weather day (of which there are many). They only tell you Fjordland is one of the wettest places on earth once you've paid your money lol.

Re: What would you say...
Apart from what others have said (SI glaciers would top my list):
Taieri Gorge railway - an absolute must if you're in Dunedin.
NZ's third island - Stewart Island, and the associated Ulva island wildlife reserve.
Akaroa is somewhere pretty unique too if you're in the vacinity of Christchurch.
If you're up for a thrill ride, one of the jet boats around Queenstown, and the rafting there is supposed to be pretty good too (on my hit list for next time we're in that area).
Rangitoto Island off Auckland (pretty much the only reason I'd re-visit Auckland).

We'll be here first two weeks of July, so you could always pop in... other than that i'd say Taupo and Queenstown...

If you'll be anywhere near the top half of south island, winter is a good time to visit:
* HANMER SPRINGS - a favourite with Chchers for winter weekend getaways
http://www.hanmersprings.co.nz/
* KAIKOURA
Whalewatching:

May/June/July 2011 Kaikoura 'Experience' brochure:

* MOERAKI
If you're planning to go further south (Dunedin/Oamaru way), stop in at the little fishing village of Moeraki to see the famous 'Moeraki boulders' for one, but especially for lunch or dinner at the delightful award winning and very reasonably priced Fleurs Place restaurant

...or go slightly less mainstream.
Book yourself in for hunt or a fly fishing day. Shoot or hook ya dinner!
The boat from Pipiriki to the Bridge to Nowhere is a blast, proper jet boat on shallow rapids, and not a single 180 required!
Have a surf at Raglan.
Get an a horse in the highlands.
Go for a paddle at Piha and get on the tele when you're dragged out to sea by bone stripping rips
Most excitingly, drive slightly over 60 miles an hour, the light show is trippy .
