what is our chances?
After a few months of research it appears that my husband and I don't have enough points to qualify to enter New Zealand as we are. My husband has a pcv licence and a HGV class 1 licence and I have a HND in legal studies and work as a legal secretary. We don't, therefore, have the required skills New Zealand are looking for! .
That leaves us with two options, if I am correct. The first is that either of us try to secure a job before we apply for residence in New Zealand, therefore, giving us enough points, or, secondly, do what i originally wanted to and buy a business (preferably a small cafe) and apply as investors. We are not looking to have the "perfect lifestyle with lots of money" as we know it is not possible! we just want a comfortable life in New Zealand. (We dont want to live in the UK anymore!)
Should I forget the idea as it seems impossible?

Have you thought about taking IELTS in order to boost your points?

I might be wrong but I didn't think you could get PR as an HGV driver anyway (BEVS will know for sure so maybe she'll put you straight) but there is nothing to stop your OH applying for HGV jobs and coming on a temporary visa, and renewing that.
I think under the LTBV if you want to run a business you have to prove you have run/or currently run a similar business and/or have experience of such, provide a detailed business plan, etc. If you look on the NZIS website it gives the details of all the criteria they require.

As per my post above. I can't see extra points for a positive IELTS test anywhere.
As far as I know , no-one gets extra points for an IELTS .A standard of English language is one of the criteria NZIS sets. Like Health of Good Character
With some occupations requiring registration and if English is a 2nd language then an IELTS is needed and must score at a certain level for an application to even be considered.
