Major building companies.

What a mate of mine did before he came over was looked in NZ yellow pages and e mailed as many big building firms as possible, he kept sending them and because he is a solid plasterer as well they replied in their droves,

Where are you looking to locte to, this will make a difference to?

Queenstown and the lakes have more building consents out than builders at the mo, the housing market is in decline at the mo but Central Otago will always need builders up there, mind you they dont do alot of code 5 skim coats here, they call it Gib stopping, the plaster boards sheets have tapered edges and when butted together leave a small trough that needs filling, they first put scim mesh tape in, then a coat of Gib mix and lay some paper tape in joint then smooth off, let it dry, than go over it woth another thin coat of mix wider than the first, then when thats dry another fine coat even wider than the last, when dry they sand it down nice a nd smooth and thats it, and they also fill all the screw holes, you dont see to much solid plastering going on, rendering is a good skill to have, as they seem to do that abit on new builds.

A big company on SI is called CalderStewart, they are a big firm, also Lunds, ABL, but i would look a few up and get the HR persons details and get in touch with them.

LauraD your OH will be more familiar with the term dry lining for what Fooferfish describes. NZ style of construction calls mostly for dry lining so there is little call for our traditional wet trades. You don't see much in the way of external render finishes either, as they tend to opt for the cheapest and quickest methods (quantity over quality), preferring monolithic plaster cladding (e voila - leaky building syndrome) or weatherboard type finishes.

See here for more info:

I am sure however, a real plasterer such as your OH would still be in demand.
