If you're doing Rotorua to Taupo (or t'other way around) there's a few interesting places off SH5 (the main road that runs between the 2). Wai-o-Tapu, Orakei Korako, Riverjet, Waikite Valley Thermal Spa or Waimangu. That should be enough to keep you occupied on the 75km (or thereabouts) journey between the 2 towns
