Oriental marinade

Ingredients
6 tbsp groundnut oil
4 tbsp pale sherry or rice wine
2 tbsp light soy sauce
2 cloves garlic, crushed
2.5cm fresh ginger, finely grated
freshly ground black pepper



Method
1. Combine all ingredients. Cover the meat, poultry, fish or shellfish and leave for 2-3 hours.

Spicy tandoori yoghurt marinade

Ingredients
6 tbsp sunflower oil
290ml/½ pint natural yoghurt
4 large cloves garlic, crushed
5cm piece fresh ginger, finely grated
1 red chilli, finely chopped (optional)
2 lemons, juice only
Spices:
4 tsp ground turmeric
4 tsp ground cumin
4 tsp ground coriander
1 tsp ground cinnamon
2 tsp paprika
salt and freshly ground black pepper



Method
1. Combine all the spices and then add the rest of the ingredients.
2. Marinade meat or poultry for 4-6 hours or leave overnight.

Hot chilli marinade

Ingredients
2 chopped, deseeded fresh red chillies
1 clove crushed garlic
1 tsp ground black pepper
60ml/2fl oz white wine vinegar
1 tbsp caster sugar
2 tbsp sunflower oil
1 tbsp freshly chopped parsley



Method
Mix all the ingredients together.

OK OK I give in

This is the famous smoked chicken recipe.

Add about 1/2 a cup of dark soya sauce to a large dish, add 3-4 good splashes of Tabasco - place in the chicken then coat well - sprinkle over salt and pepper then cover the chicken in brown sugar (like a whole desrt spoon full per piece). The turn the chiken over in the dish and do the same again with the salt, pepper and sugar then leave it all for a couple of hours.

Give the chicken 2-3 mins in the micro then place the chick skin side down in the smoker having first added 1 1/2 handfuls of Manuka saw dust to the base of the smoker. Sprinkle on more sugar and give the smoker 1-2 burns.

Now for the most important bit you MUST drink lots of beer while the smoker is going - If you do not carry out this stage the results could be very disappointing as I find you only enjoy black food if you are at least half p@##$d - well it seemed to work on you ha ha.

Tegel do a ready-smoked one.

Mind you they do terrible things to them before the smoking takes place.

Or do they attatch electrodes to their chicken nipples and shock them for a while until they lay an egg?

Mmmm food!

Warm Avocado.

1 Med-large Avocado
Red onion
Tomato
Cheese

Half the avocado and remove the stone. Very finley chop up red onion and place in the pit. Place a slice of tomato over the onion and a thin slice of cheese (of your choice but good old cheddar is great). Place under a hot grill until the cheese melts. EAT! (can get a bit messy but worth it!)


Marinated tuna steak. (this is sooo easy but soooo tasty!)

To marinade two small to medium steaks:
4 tablespoons of soy sauce
1 or 2 tablespoons of worsestershire sauce (can you get that in nz?)
Half a teaspoon of mustard (any kind you like)
1.5 tablespoons of sunflower oil.

Place ingredients in a dish and mix. Pour over steaks and leave for half hour to 1 hour, turning them frequently. Enjoy
