I'm onto the beetroot now.

Anyone done any freezing or pickling with beetroot ?

I'm wanting to do both .

Beetroot is delicious juiced (have to use a proper veg juicer) with apples to soften the flavour.

I fancied a bit of pickled beetroot with my salads but it doesn't exist here already sliced and pickled in jars.

I bought a few small pre-boiled/cooked (or whatever the Italians had done to them) vacuum packed beetroots and at home I sliced them myself and stuck them inside a glass jar. You can't get malt vinegar here and all the USA websites talked about pickling vinegar. I didn't have that either so I used balsamic.

The next day the beetroots were fantastic but I swear that every day after that they just got more and more pickled until even my mother - who loves pickled anything - couldn't eat them.

Tip - don't use balsamic unless it's for a dressing or a one/two day pickling only.
