Default moving to UK what happens after family permit??

Hello, I've read all of the posts on this site about the EEA family Permit and I was wondering if someone could explain to me what happens after one gets the family permit? I know it lasts for 6 months and then you need to apply for a residency card? or stamp? I read some posts that say this is a really long process. Where do I do this? What do I need to prove?

Our situation is complicated, my bfriend is French, and I am American and we've been living in France for two years together. He got a job in the Uk and he starts monday - so we are not pacsed or married, but we have proof of living together for 2 years, and a certificate of concubinage (meaning we have been living together) from the mayor's office.

I am really confused as to what I would need to apply for if we were granted the EEA family permit for non married couples...also we were going to get pacsed but the visa service told us it wouldn't help us so we didn't. Should we get pacsed in France or get a civil partnership in the UK?

All help is appreciated. Thank you!
