Simple question, which is best?
2 year Limited or 3 months rolling (which means unlimited with 3 months notice)?

My preference would be the two years jobby as three months could actually mean three months. Mind you, there is usually a probationary period for fixed, long term contracts too.

For income tax a contract that covers a full tax year is best. Contracts are a bit irrelevant . There is no job security, If you are not wanted you go regardlees of what the contract says.

Unlimited may be better if you want easier options to leave. Whilst it can cost a company more to get rid of someone on a limited contract as they have to compensate you, it is also more expensive for you if you want to leave early.

There is no job security, If you are not wanted you go regardlees of what the contract says.True but Ministry of Labour will help sort any disputes re end of service gratuity / compensation

Kix m8 - google the UAE Labour law. Essentially the difference relates to compensation payable if the employer terminates you early under a fixed term contract. But also beware as you may find yourself trying to buy your way out of a contract too if you want to foxtrot oscar early... Kind of six of one etc
