Use Nile Perch or any other white fish fillets. Put rough chopped onions, tomatoes, mushrooms and cauliflower and broccoli in a skillet, par cook with a little olive oil. Throw in mange tout, baby asparagus, French beans and any other veg you like. Add chopped dill, parsley and coriander. Add a glass of white wine and any seasoning you like( curry, chillis etc)
Place the fish on top and cover and steam for about 6 to 8 minutes until the fish is cooked.
Cauliflower Mash, The low carber’s potato substitute!
Boil cauliflower until it is very soft, drain well and place back on low heat, mash over the heat until all the moisture has gone. Add butter and finish mashing. Place in ovenproof dish and grate cheese over the top mixed with a little bran bake for about 15 minutes. Use as an alternative on the top of cottage pie
Courgette Cake
Grate courgettes, sprinkle with salt and leave for 15mins, drain and wring out in clean cloth until very dry, place in large mixing bowl with eggs and grated low fat cheese, add curry powder season to taste.
Cook in pan with little olive oil and a little garlic (optional), either as small individual cakes or one big thick one cooked like a Spanish omelette. Good hot or cold.
