Buying a car privately - advice please

Buying a car privately - advice please
We have found a car we want to buy privately. It does not have any outstanding finance on it and we are cash buyers.
The seller would be quite happy to take UK pounds as he will use it to buy a car in the UK. It would be best for us too to pay in UK pounds.
If we do a bank transfer it will take 3 to 4 working days to be in his account. Is there a standard contract we can both sign confirming that we are buying a car and have paid for it ? the problem is until registration is done, the seller has the car and the cash! what is the safest procedure ?BTW the seller seems genuine but you never know if something happened to him, we could end up loosing a lot of money!
Looking for advice.Thanks.

Thanks for your advice. We decided to pay in dirhams on registration. The seller lives in the UK but is here till next week. It makes things easier and less risky.
