I'm confused about something (surprise, surprise! lol). How many AOS interviews are there? It seems to me there are two...one shortly after you turn in the AOS application, to receive the conditional card, and a second one down the road where you show proof of a bona-fide marriage and get the conditions lifted. Am I right? Or is there only the one to get the conditions lifted?

Generally, there is ONE adjustment interview. Please note the "generally." Please note that once the adjustment is granted, "permanent residence" is granted but it is subject to a "condition" of putting in that I-751 to remove the condition. It is NOT an "adjustment." Removal of the condtion is NOT a change of status in any way -- there is nothing to "adjust."
This may seem pedantic, but it is concept that has substantive effects.
Most joint I-751's who have good documentation are not interviewed.

What do you consider good documentation? If you were filing what would you
be sure to include and what's just extra mailing weight to include? I

after second anniversary of their marriage and then you receive
permament residency status without condition.
