Some people say I cannot visit my boyfriend while K1 visa is
processing. Some say as long as I have proof that I will go back to
Canada. How about him, can he come to Canada to visit?

You can visit him, and he can visit you. Just bring lots of proof that youre plannign on returning to your respective countries after the visit

You can visit each other. The question is whether or not the immigration officials will let either of you cross. As long as they are convinced it is just a visit.

What ever you do, do NOT lie to any immigration officer. You don't have to volunteer information if they don't ask.

I made several trips to Paris while we waited for my future wife's K1 to
be approved. I had no problems at all.
We didn't take the chance for her to come to the U.S.

Yeh, it's too risky for the one who has the visa pending. I have no problem when I go to England to visit my wife, but when I phoned the USCIS to ask what they thought about her coming here while her visa is pending, they said that there's a good chance she would be denied entry.

But, yeh, it does come down to the immigration officer you meet when you go through customs/immigration. You have to convince them.
