After going through the lenghthy process of applying for a k1 and being successful, me and my fiance are considering living in the UK as oppossed to the US. We still intend to get married in the US but i plan to come back to the UK after a month. My husband will stay behind for a few months while processing his UK papers with the British consular. Is it possible to adjust status while out of the US?

No.

After you arrive in the USA on your K-1 and get married, if you want to become a US PR, you need to apply for adjustment of status from within the USA. If you leave the USA before having Advance Parole (AP) in hand (which is part of filing AOS), you abandon your AOS process. It takes about 60 days to receive AP after filing AOS.

Right... and if she doesn't want to become a PR, she can leave anytime after the wedding - more or less without issue.
