Fun,
Yes, you can study on a K1. (You won't be a K1 for long - only 90 days, right?)
You don't need employment as long as you have some other way to pay the tuition and fees!

Thanks for your replies. That is true that I won't be a K-1 for long. However, until the AOS interview, I don't have a greencard so I am not sure if I have to pay International Student rates in university.

You can go to school with AOS pending but you will not be entitled to Financial Aid. You have to pay for your own. If you're living in your state for a year, you might be qualified for In-state tuition.
That's what I have told by the school when I inquired about going to school without a greencard.

Although related to immigration, your question is not really one of immigration law -- it is a matter of the law and regulations of the University in question.
A few years back, I reserached and argued on a case [ancillary to the BIG immigration problems of other family members] on resident v. non-resident fees at the University of California. My client had been classified as a "resident" by the community college he had attended, but UC classified him as a "non-resident" -- Would you believe that the California Administrative Code had separated section for US and then CSU&C/Community Colleges? Also, I felt that UC's interpretation was wrong. The officer who made the intial determintion was later reversed by another official two rungs up the ladder.

K-1 visa holders are able to recieve in-state tuition in florida (as long as they are married to a US citizen with Florida residency), or another method. Also, those whom have applid for AOS are eligible too. This means that you can go to school here immediately and be ok for instate tuition (as soon as you marry).
This is covered under Section 6A–10.044, Florida Administrative Code.

This may or may not be true ... it really depends on the local college
you go to. The college I attend was just concerned with the varification
with the INS at the time I first signed up. I had been in Iowa for over
a year but they never questioned that during the enrollment process.
After about 3 weeks the verification was completed and I was able to
receive in-state tuition and financial aid. If I had a green card at the
time of application the approval would have been instant.
Best thing is to go to your admissions office and ask what they have to
do and what you can do.
Good Luck!
