We are applying for AOs and my hubby is the uk citizen. Is his present address for this forms purpose his US address or the one in Scotland?

Think of AOS as starting a brand new process and resist thinking about his K1 forms. It's like starting over. He lives in the US now. He is married. He is unemployed since he left his job in Scotland. If he was female, he most likely would have taken a new last name. Go with where he is right this minute, not what his K1 documents said.

If you are doing AOS, it means your husband is now in the USA and applying for his green card. He no longer has a current address in Scotland. His current address is now in the USA.
