Default Preparing for DS156K and DS157

Hello fellow BE's!
I have a couple of questions from getting prepared with these two forms (DS156K & DS157) for those who have done them, if you can help:

DS156K - How did you prove 'evidence of engagement'?
I have a photo showing the ring taken the day after and two shots of the ring itself, do you think that would suffice?

DS157 - Do you know if they contact your former employers?
The reason I ask is that my last employer and I do not get on at all, as he is my ex father-in-law and has already demonstrated a total lack of cooperation, and indeed a wish to make life as hard as possible for me

I think we included photos of our small engagement party, a picture of us wearing rings, and proof of my travel to Turkey to get engaged.

To my knowledge, they do not contact your current or former employers.
