Hi,
Was wondering if the K-1 process was any more difficult if the intended wife
was from China instead of from somewhere else in Asia or Europe? Any good
references that would help in this regards?

More difficult, no; same process. Slower, yes. Here's a couple of links for you to US/China message boards. The Yahoo groups are moderated, members-only and instructions on membership are on the main page.

If your Chinese isn't too good, you can also use Altavista babelfish to translate the Chinese language version of 001. Just open babelfish, paste the URL in the 'Translate Web Page' and select Chinese to English translation. It makes some interesting 'errors'.

Don't be alarmed about the brit thingy....I see you are a usenet poster. My guess would be through google. Google is fine (they have a great search engine) but the alt.visa_marriage usenet is only refreshed a few times a day. Britishexpats is online-real time to the usenet so you don't have to wait for hours to get an answer. It's the best source I've found for 'general' information about INS processing.
If you are interested in timelines, the dave hollis site is the best one I've found. His site goes down now and then for a few days, but a lot of folks post their K-1 timelines though the various service centers. This link is sorted by NOA2, but you can click the column heading to resort. He also has some hot links to consulate web sites. May as well throw it in too.
