My fiance and I are marrying in January (before the 90 days expires).
Can someone tell me how long it takes before the first interview? I am
in California if that matters.
Also, is there a good website that explains all the steps we need to
take - I thought it was simple but the iscis.gov site has cascading
forms and I would love to see a neat and accurate checklist.
Thanks!

As for the AOS interview, that can be anywhere from 90 days up to 2 years in coming.

we applied to adjust status from a K1 through Los Angeles in July of
this year (2004). I don't know what processing times are currently
doing at LA but we had our interview just four months later and the
Welcome NOA and Greencard turned up in the mail about a week later.

And someone else in the alt.visa.us.marriage-based forum has reported they are still waiting in LA for their interview and have been waiting since 2002.
Bear in mind that the timelines published by the CIS are works of fiction. They are not held accountable to the timelines published.
