K-1 processing question.

K-1 processing question.
Anyone who has done the K-1 at what stage do they want to take your passport to put the visa in? We are looking at starting processing in December when we are next together and my other half may be coming here in March hopefully for my birthday. But I was kind of hoping I could suprise him and make a trip for his birthday in may. But I read somewhere that they take your passport for a while at some stage so wasn't sure if it'd be possible if I can even do it as we have to save a lot for the time when I can't work while my greencard is processing (I do have a lot of savings just not sure it's enough).
