K-1 Evidence
What evidence can we give to prove we are engaged? Do we have to be engaged or is the intent to get married enough?

If it's for the K1 (and it's more to prove a relationship than to prove that you're engaged)
try: phone bills
plane tickets
picts of you together
engagement ring receipt
emails
stamped passport pages showing your trip to another country
Note, all of these should be copies that you send not originals, but the foreign citizen will need all of the originals to take to the interview at the consulate at the time of the k1 interview.
