Joint sponsor's proof of citizenship
Is a photocopy of the passport page for the joint sponsor enough to show the embassy, or do I need a copy of the joint sponsor's birth certificate with the embossed seal or something to prove it's authentic?

Either should do. If you are sending a copy of the front page of the passport, then send a copy of their driver's license as well as additional proof of identity. Just my take on it.

We just sent in a photocopy of the front page of my mother's passport. It was fine.

We notarised a copy of the passport just to be 100% sure but I don't think you have too.
