Default Immigration maze

Overly simplistic and annoying - apparently I'll never get a green card (apart from the one in my purse) because K1 visa doesn't exist in this world

Yes it does, you click yes to family in the US, yes the family is USC, yes spouse, no to same sex. The result covers both K1 and IR/CR1.

You mean because the K1 is the visa in to the country (non immigrant or dual intent?), the AOS, after marriage, is what gets you to stay.

It's badly written. It should ask if you are related to a USC rather than if you have family in America.

Not really. By definition you can't be the spouse of a US citizen (or anyone) to get a K-1. The initial answer to the question is No.
