My K1 visa was just approved, and we are waiting for her to receive letter
about her interview. I am disabled and not working at present. Surely they
cannot discriminate against us can they?? Is there any advice for us.?

If you have the income and/or assets, it doesn't matter
They can't discriminate against your for being black, white, disabled,
Catholic, Protestant, etc.
However, "Lack of income" is not a protected class.

They can deny a visa if it cannot be established that she is not
likely to become a public charge in the US, based upon the what is
presented at the interview.
If your income and/or assets are insufficient to assure this, the only
other option is for someone else to cosponsor her.
