This may seem like a strange question but: will the USCIS contact the US citizen's parents during the immigrant visa process no matter what?

The only reason I can think of that USCIS might contact the USC's parents, is if they are joint sponsors and the Officer has a question for them, after your interview. To my knowledge, they wouldn't be contacted otherwise, no.
