Default I-134 concern

I was laid off by my employer. I received an 8 month severance package.
I got the letter from my employer prior to the layoff.
And I make much more than the 125% poverty level requirement.
But I am concerned that the INS will deny my fiance's visa without recent
paycheck stubs.
Anyone know their policy on this?
Should I be concerned?

The question is how recent do they need to be?

What country? Can't you use your tax returns?

I am a USC. I can provide tax returns for the past 7 years, but I've seen
posts where they mention that they took their paystubs with them. Are
paystubs required for the Consulate interview?

A pay stub requirement I haven't really heard BUT they say it helps to have
a Letter from the employer that states your annual salary and how long you
have been employed.
