I-130 Process?
What is the process of going through the I-130 WITHOUT going K-3? Is there an
interview at the Embassy? Does the spouse still need all the stuff which the
K-1 or K-3 demands? Once approved will the spouse be allowed to work as soon as
entering the US? What about advance parole? Would they need it?
I know there is a long wait on the I-130, but what do they do with the
application once it is submitted?

The I-130 is a petition that qualifies the beneficiary - the alien spouse - to apply for an immigrant visa. So yes, the beneficiary of an I-130 needs to apply for a visa and be interviewed.
An alien spouse who enters the US on an immigrant visa becomes a Permanent Resident on entry. PR status carries with it the right to work and the right to re-enter after travel abroad, so neither employment authorization nor advance parole are necessary. A re-entry permit might be required of the PR is going to be away from the USA for an extended period of time, definitley required if the absence will be more than 1 year.
