Generally, this is between several weeks and several months... although it can be much longer. There are many variables... where the application was filed, where the foreign fiancee lives, whether that foreign country is known for its high incidence of visa fraud, how many other people also have a K-1 pending, how soon the fiancee returns the checklist to the consulate, how much time it takes to get police clearances, medicals, etc.

A K-1 can only be approved with an interview.

I assume you mean after the I-129F is approved and forwarded to the NVC (if you are not dealing with the US Consulate in London) and then to the US Consulate abroad, how long is the wait for the K-1 interview to be scheduled.

It can be as quick as 10 days or as long as 10 months. Depends on how quickly you return the checklist to them stating that you have all of the documentation required to perform the interview.
