I am trying to get my girlfriend here through K1 (she lives in Taiwan
now), anyone has an idea how long the whole process will take
approximately? (from the point I file the application to the point she
enters the country)?

Approximately?
A year. Could be more. Could be less.

There's no way to know for sure. There are so many factors such as backlog at the service center in the USA, backlog at the US Embassy in Taiwan, how long security checks take, etc. It might be safe to guess about a year. Don't be upset if it's more, and be pleasantly surprised if it's less.

You say she lives in Taiwan "now". Be aware that she will need police reports from any country she lived in for longer than 6 months, after the age of 16.
