how do you convert I-130 from unmarried to married?
How do you convert an I-130 form from petitioning someone as an "unmarried
son/daughter" to petitioning someone as a "married son/daughter"?

You didn't say what is the status of the petitioner? If the petitioner is not a USC,
but a green card holder, the married child lost the petition when he/she got married
(green card hoder can only petition unmarried son/daughter.)
If the petitioner is a USC, then the unmarried son/daughter would first be "upgraded"
to "USC unmarried son/daughter", which would probably be quick enough to make the
(original) priority date become current...

The petitioner does not perform the conversion. The conversion occurs automatically
upon the event which causes it.
As a practical matter, the beneficiary waits until after the I-130 has been approved,
and he or she is ready to take the next step, either responding to Packet 3 (for
consular immigrant visa processing) or filing Form I-485 (for adjustment of status).
Then he or she informs the State department or INS about the event which caused the
conversion of category in a cover letter included with all the other documents.
In the case of this marriage, the beneficiary will be taking the next step *later*
than he or she otherwise would.
