I tried searching for info on co-sponsoring ut couldn't come up with much. If me and my girlfriend were to go for a K1 could her mum sponsor me? Does she have to have a particular level of income?

I posted the link and form names and instructions for the affidavit of supports in Post number 10 in this thread.

In addition to that, go to www.uscis.gov, Immigration Forms, and look at the I-864P. That is the poverty guideline used in determining how much income one needs to have to be a sponsor or joint sponsor.

However, for the K-1, that level is flexible for the I-134. It's up to the officer's discretion at your interview. But the I-864P is a good guideline to go by.

And yes, if her mom earns enough, she can be your sponsor for the I-134 for your K-1 visa. She can also be your joint sponsor for the I-864 for your subsequent AOS in the USA, if your wife doesn't earn enough by that time.
