Me and my wife just got married. She is American and I am British. We
want to live in Minnesotta. I am due to return to the UK at the end of
my 90 day visa wavier.
Should I file for an adjustment of status here or is there a way to do
it while im back in the UK.

If you entered with no intent to marry and have done so "on the spur of
the moment" you can stay in the US and file. If you have married very
soon after entry this could pose a problem. If you return to the UK
after marriage the paperwork must still be filed in the US but you will
not be able to return to the US permanently until the visa is available
(which could take several months or perhaps longer).
Also, if you stay and file you cannot leave and return to the US without
an approved "advance parole" document so one suggestion is to file for
this (form I-131) at the same time all of the other adjustment of status
(AOS) documents are filed. I did not do AOS myself so others who are
familiar with the process can provide details.
