fiance here on K1 visa what next?

We plan to marry on July 19th.
Should I file for the EAD stamp or wait until we get married?
Once we are married, what paperwork to I file to change her status?
And how soon will she be able to work?

that all depends on the office you file for the ead. that can take 60+ days. and the 90-day ead expires 90 days after arrival to us - so it is usually not worth to file for it and wait for the aos and file for 1 year ead. you could go and apply for ssc while you wait for marriage.
