Hi

I was wondering something does the filing of I-485 does cancel a prior overstay and put everything back in order???

No, it doesn't cancel an overstay. In particular if the person has accrued
illegal presence of 180 days or more they would still be subject to the
three year ban if they left the US (going up to 10 years with illegal
presence of a year). This is only lifted once permanent residence is
granted.
