Can she file for her parents too?

My GF is wondering if she can file another visa petition for her parents while our k1
application is in process?

I'm guessing that you are the US citizen and she is the intending immigrant. If so,
no she will not be able to file for her parents for a good few years. Only US
citizens can file for their parents so she would need to adjust status, wait three
years, file to naturalize, naturalize and then she could file for her parents.
Of course, if she is the US citizen, it would be possible for her to be filing for
them and for you at the same time but I'm guessing that's not the case!

Well then, she can knock herself out with applications! She should note that she will
need to be able to cover all three of you for the affidavit of support documents.

The only issue that connects this to your K-1 is the requirement that she have enough
income to meet the 125 percent requirement for herself, any dependents living with
her, plus the 3 or you. Other than that, the application for your K-1 has nothing to
do with them. That is why we were assuming they were the K-1 immigrant's parents.
She would file I-130 and the other needed documents. There is no waiting for a
priority date for parents.
They would be permanent residents on arrival.
