When is the best time to get married so that my fiance would have her green card with me? I'm in the middle of my Labor certification process.

Do you want an indoor or an outdoor wedding? If it is outdoors, avoid bad
weather. If it is indoors, pretty much any time of the year is good...

Before you submit your I-485.

To expand, if you're an H-1 and your fiancee isn't in the US, you should marry her, get her an H-4, and bring her to the US. Once you're both here, submit your I-485.

You can do it later (basically any time until the moment the USCIS approves your I-485 -- BUT NO LATER!!!) but it's more complicated. However, if you haven't been fingerprinted yet, you're not at any risk of USCIS approving your application. After they do so, if you're not married yet or her Green Card paperwork isn't in the system, your fiancee will be stuck waiting 5-7 years for her number to come up.
