In the instructions it states that if you are in the US you MUST
attach a copy of a document showing your status (I assume copy of VISA
and I-94) AND And explanation etc... OR If an applicant for AOS - copy
of the receipt of filing of AOS....

I think the AND/ORs are confusing.

So I am filing for AOS (from H1B) married to USC. I am filing all AOS
and EAD and AP forms together. How can I attach my AOS filing receipt
if I am filing them all together?

Just file them together; attaching the I-131 to the I-485 is good enough.
Note that not all local USCIS offices allow you to apply for AP when filing
the AOS package. You should check the field office page on the USCIS website
and also look here:
