AOS - I-864
So my wife has started to fill out the sponsorship form and can we do the following:
i want to use my UK bank account as an asset, do i need to move money to my us account or just write down the UK balance in dollars?

The balanced in USD equivalent is fine, but just make sure you have excess assets on the form as you wouldn't want a movement in the exchange rate to leave you short.
The requirements for "assets" are that they have a provable market value and can be realized fairly easily. Obviously cash in the bank meets both criteria, but a work of art by a little known artist would be a very tough sell.

Thanks, even 1:1 shouldn't be an issue, just very hesitant to move it with all this brexit crap going on at the moment

No need to move the funds. She simply lists it as an asset on the I-864. Because you're married, assets are considered joint, no matter in whose name they are in.

we was going to submit them but then I re-read the instructions again and it states to submit if you think it would help support the proof of maintaining the continued income. they dont meet the requirements and tbh this is when she worked crap hours for mcdonalds so the gross pay is not enough
so far we are submitting 2015 1040, W2 if we can get a copy, 6 months of payslips from her new job and my bank statement to show assets to make up the fall in income.

Most likely, yes.
I'm pretty sure that's not what it says. It says you should submit 3 years' worth of tax returns if you think it will help you qualify [to adjust status].
You have assumed, incorrectly I might add, that they want to see the tax returns only if those tax returns meet the income requirements. It doesn't matter whether the returns show strong income or not - because current income is more important than past income, and you're including information about current income. If you have 3 years' worth of returns, why sabotage your chance of success by withholding information when it's just as easy to include it?

Looking into it with the company that files her taxes, they sent the 1040's but either failed to send the W2's or she destroyed those. if the tax firm doesnt come through i can see that she can register online with IRS to get an online copy of them

It helps to understand that if your wife has the official tax transcripts from the IRS, then W-2s are not required. Those were submitted with her tax returns and if she had filed on-line, they were verified by the IRS.
The tax transcripts can be ordered on-line and take about 10 days to receive.
