Affidavit of support

My Fiancee and I have been going through the whole K1 process for the
last year and a few weeks ago, I recieved the packet of forms from the
US embassy in London. I had all the documentation they ask for except
the affidavit of support. We then found out that the one and only
person we know that could and would be a co-sponsor now finds that
they can't do it. This is causing us major stress. We are both single
parents (although I would be going on my own as my kids are old enough
to look after themselves and don't want to go anyway). My fiance lives
in Nebraska which is apparently a low wage state anyway and she earns
nowhere near enough to fulfill this on her own and also doesn't have
assets as such. I'm not exactly rolling in money either and don't have
any of the "in demand" skills they talk about on the official website.
As she has kids of school age, the option of her moving here is not on
for several years but, I'm in my late forties and she is in her early
forties and while younger people meeting mayhave the time to wait if
need be, even three or four years is a long time for us.
Does anyone have any suggestions how we could proceed?
